In Corsica, hunting is an ancestral tradition. The wild boar is the game king. Beaten are organized as soon as hunting is open.
The inextricable vegetation which covers still today a good part of Corsica is a true sanctuary for many animal species, in addition threatened and protected. Hunting remains possible for certain animals such blackbirds and thrushes. Large amateurs of myrtles and arbutus-berries, they are succulent when they are taken in the neighbourhoods of January, period when them flesh is scented. The game, abundant and varied, is used by the restorers for a traditional kitchen in full rise.
